Asian Chef de Partie (m/f) - Falkensteiner Hotel Iadera
JOB DESCRIPTION AND RESPONSIBILITIES:
- Food Preparation and Cooking:
- Prepare and cook Asian dishes as per the menu, ensuring high standards of taste, presentation, and portion control.
- Specialize in Asian cooking techniques, including stir-frying, steaming, grilling, braising, and wok cooking.
- Ensure that food is prepared in accordance with the hotel’s recipe standards, while also creating innovative and seasonal dishes.
- Maintain high-quality food standards and presentation that align with the hotel’s 5-star reputation.
- Menu Planning and Execution:
- Work closely with the Sous Chef and Executive Chef to plan and develop Asian menu offerings, including specials and seasonal items.
- Contribute to menu development by suggesting new ideas for dishes or improvements to current menu items based on trends in Asian cuisine.
- Assist in developing and testing new recipes, ensuring authenticity and consistency in flavour.
- Quality Control and Consistency:
- Ensure that all dishes leaving the kitchen meet the highest standards of taste, quality, and presentation.
- Perform regular tastings and quality checks of food products to ensure consistency in preparation and presentation.
- Work to minimize waste and maintain proper portion control, ensuring cost-effective kitchen operations.
- Inventory Management:
- Assist in ordering and maintaining Asian food supplies, ensuring proper inventory management, rotation of stock, and ordering of ingredients.
- Monitor the usage of expensive and rare ingredients used in Asian cooking to avoid waste and ensure efficient use.
- Report any stock shortages or issues with ingredients to the Sous Chef or Executive Chef promptly.
- Guest Interaction and Satisfaction:
- Interact with guests when necessary, providing insight into Asian dishes and cooking techniques.
- Ensure that special guest requests (e.g., dietary preferences, allergies) are accommodated and communicated clearly to the kitchen staff.
- Respond to any guest feedback about food quality or presentation, working with management to resolve issues quickly.
REQUIREMENTS AND SKILLS:
- Experience:
- Minimum of 3-5 years of experience in a high-end restaurant or hotel kitchen, with at least 2 years in an Asian cuisine-focused role.
- Proven experience as a Chef de Partie, specializing in Asian cuisines such as Chinese, Japanese, Thai, Korean, or Indian.
- Experience in working in a fast-paced, high-volume environment, preferably in a 5-star hotel or fine dining setting.
- Skills:
- Expertise in Asian cooking techniques and ingredients (e.g., wok cooking, sushi preparation, dim sum, etc.).
- Strong knife skills and knowledge of traditional Asian knives and tools.
- Excellent organizational and time management skills.
- Knowledge of food safety and hygiene standards (HACCP and local regulations).
- Ability to work under pressure and maintain composure in a high-stress environment.
- Strong team player with leadership potential and ability to guide junior staff.
- Languages:
- Proficiency in English (spoken and written); knowledge of an additional language (e.g., Mandarin, Japanese, Thai) is an advantage.
