JOB DESCRIPTION AND RESPONSIBILITIES:


    Operational Leadership & Coordination
    • Organize and oversee daily operations in all restaurants and bars, ensuring smooth coordination across outlets.
    • Supervise ordering, preparation, service, and quality control in line with 5★ standards.
    • Maintain rigorous quality control of all food and beverage products, with special focus on buffet presentation and à la carte offerings.
    • Coordinate with kitchen and service managers to optimize workflow and guest experience.

    Financial & Strategic Management
    • Develop and manage the annual F&B budget in collaboration with Finance and Controlling, setting clear revenue and cost targets.
    • Monitor monthly performance of all outlets, analyse variances, and implement corrective measures to improve profitability.
    • Plan and optimize staffing allocations across seasonal operations (main restaurant, bars, fish restaurant), ensuring cost efficiency without compromising service quality.
    • Keep detailed records of material usage, beverage stock, and inventory control.

    Guest Experience & Service Excellence
    • Ensure seamless delivery of half-board and light lunch services in the main restaurant, adapting offerings for families and children.
    • Oversee the design and presentation of menus for each outlet, ensuring alignment with hotel brand and guest expectations.
    • Resolve guest complaints promptly and professionally, turning feedback into service improvement opportunities.
    • Develop innovative concepts and promotions (e.g., themed buffet evenings, seasonal cocktail offers, seafood specials at the Fish Restaurant) to enhance guest satisfaction and hotel reputation.
    • Develop and implement completely new restaurant concept for one of our outlets

    Team Leadership & Development
    • Lead, train, and inspire F&B managers, chefs, bartenders, waiters, and support staff across all outlets.
    • Conduct regular performance evaluations, identify training needs, and ensure continuous staff development.
    • Support career progression within the team through mentoring and structured development plans.
    • Ensure effective scheduling, vacation planning, and task allocation.

    Quality, Safety & Compliance
    • Guarantee compliance with HACCP standards, food safety regulations, and hygiene protocols across all outlets.
    • Oversee regular inspections of restaurants, bars, and storage facilities, ensuring proper cleanliness, equipment functionality, and safety.
    • Enforce compliance with alcohol service laws, including ID verification.
    • Ensure all outlets meet operational standards set by Falkensteiner and 5★ hospitality benchmarks.

    Innovation & Collaboration
    • Collaborate with the Marketing team to create promotional events, seasonal campaigns, and guest experience initiatives.
    • Introduce new concepts in food and beverage tailored to family hospitality and regional culinary traditions.
    • Work closely with the Rooms Division and Wellness teams to integrate holistic guest experiences (e.g., healthy kids’ menus, wellness drinks at pool/beach bars).

RESPONSIBILITIES:


  • Proven experience in F&B leadership within a luxury or family hotel environment.
  • Strong organizational, financial, and analytical skills.
  • Exceptional leadership with the ability to motivate and develop a multicultural team.
  • In-depth knowledge of HACCP, hygiene, and safety standards.
  • Creativity in menu planning, concept development, and guest experience enhancement.
  • Excellent communication and problem-solving skills.
  • Fluency in English; knowledge of German and Croatian is an asset.

  • bachelor’s degree in hospitality management, business administration, or a related field
  • 7-10 years of experience in food and beverage operations
  • proven leadership experience in a multi-unit capacity

  • ability to work in a fast-paced, dynamic environment
